Recipe: Zucchini Pasta With Tahini Cashew Sauce


Recipe: 2 Servings

Zucchini strips (create them using a mandolin or simply shred them with a shredder)
1/2 cup sundried tomatoes (soak them in water if they are tough/chewy)
1/2 cup quinoa
1/8 cup coconut flakes

Sauce: Blend the following using your blender or VitaMix.

1 teaspoon tahini
1 teaspoon cashew (almond butter or peanut butter works too)
1/4 cup almond milk
1/4 ripe avocado
1 tablespoon nutritional yeast
1/8 teaspoon miso
Juice of 1/4 fresh lemon
Black pepper to taste
Sea salt to taste

Gently toss the zucchini in the sauce. Make sure the zucchini is well coated. Place onto plate or in a bowl. Top with quinoa and sundried tomatoes. Sprinkle with coconut flakes.

Great as a main or side!
