I was so excited when I opened my front door this morning, nearly stumbling over the beautiful box of fresh and locally grown organic vegetables.
Here is what I made for today’s lunch. Super easy. Took me 10 minutes total from washing the vegetables to putting it on the plate.
Makes 3-4 boats/wraps:
Combine these ingredients into your blender, Vitamix or food processor (you will need to push downy he ingredients as they will stick to the sides):
One broccoli crown with stems (Don’t waste the stems! Plenty of nutrition in there!)
Handful of cilantro
Handful of kale
1/2 fresh lemon or lime juice
2 drops essential ginger oil or a 1/8 inch piece of ginger
1 tablespoon almond butter
Small handful almonds
Tablespoon of chia seeds (I use ground chia seeds)
1/2 avocado
Pinch of cayenne or 1/2 chopped jalopeno
1/2 cup cooked garbanzo beans (or hummus)
Teaspoon tahini (This is already in your hummus. No need to add it again if you went that route)
1/4 cup almond milk
Blend until almost smooth, leaving a little texture (think pesto)
Place mixture into your kale boats (Large kale leaves; you can use other leaves or Ezekial Sprouted Wraps)
Lightly sprinkle with sea salt
I served this with a side of raw sauerkraut (for the probiotics and because sauerkraut is awesome) that I purchased at the farmer’s market and my favorite crackers, Mary’s Gone Crackers.
Garnish with a few sprigs of cilantro and whole or chopped almonds.
